- 200g firm tofu, drained and cubed
- 2 packs of ramen noodles
- 4 cups vegetable broth
- 2 cups water
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon miso paste
- 2 cloves garlic, minced
- 1-inch piece of ginger, grated
- 1 cup sliced mushrooms (shiitake, button, or oyster)
- 2 cups chopped bok choy or spinach
- 2 green onions, sliced
- 1 tablespoon sesame seeds (optional)
- Chili flakes (optional, for extra heat)
- Salt and pepper to taste

Method:
1. Prepare the Tofu:
Press the tofu between paper towels or a clean kitchen towel to remove excess moisture. Cut the tofu into cubes and set aside.

2. Cook the Noodles:
Cook the ramen noodles according to the package instructions. Once cooked, drain and set aside.

3 Prepare the Broth:
Combine the vegetable broth, water, soy sauce, sesame oil, miso paste, minced garlic, and grated ginger in a large pot. Bring the mixture to a simmer over medium heat, stirring occasionally.

4. Cook the Tofu:
In a separate pan, heat a bit of oil over medium heat. Add the tofu cubes and cook until golden brown on all sides, about 5-7 minutes. This is the secret to getting that perfect crispy texture! Remove from the pan and set aside.

5. Add the Mushrooms and Greens:
In the same pan used for tofu, add a bit more oil if needed. Sauté the sliced mushrooms until tender, about 3-4 minutes. Add the chopped bok choy or spinach and cook until wilted, about 2-3 minutes—season with salt and pepper to taste.

6. Assemble the Ramen:
Divide the cooked noodles among serving bowls. Ladle the hot broth over the noodles, distributing the broth evenly.
Top the ramen with the cooked tofu, sautéed mushrooms, and greens.
If desired, garnish with sliced green onions, sesame seeds, and chilli flakes.
